Green Bean and Tomato Salad

  • 6 oz green beans washed trimmed, cut into 1 inch pieces
  • 1/4 tsp kosher salt
  • 3/4 cup cherry tomatoes halved
  • 1/4 cup cilantro chopped
  • 2 tbsp chiffonade-cut fresh basil
  • 2 tbsp cashews chopped roasted


  • 1 small fresh red chile seeded and finely chopped
  • 2 tsp fresh lime juice
  • 2 tsp sugar
  • 1 garlic clove minced


  • Place green beans in athe Silikong Steamer Basket. Add 1 cup of water to the inner pot and place the Silikong steamer basket inside. Lock the lid into place. Select the Steam option and adjust the pressure level to High and the timer to 0 minutes. (Yes, 0 minutes)
  • While the beans are cooked, make the dressing. In a medium bowl, whisk together all dressing ingredients.
  • When the beans are fully cooked, quickly release the pressure. Unlock the lid. Remove the beans; they should be mostly tender and have a slightly crisp center. Sprinkle them with salt and let cool for a minute. Add beans and tomatoes to the dressing. Toss it all together and let it sit for 2 to 3 minutes or until barely warm. Add the cilantro, basil and cashews - toss again gently. Enjoy 🙂
